I rarely write about food, even though I have some gorgeous shots of dining out with friends and eating in. Getting back from my road trip, I realized that I had many magnificent meals with my friends along the way. Each one was prettier and "healthier" than the next! What a Treat!
This first one at the top was created by David Zielinski. While in Lafayette, Louisiana with Keith and David, we were treated to many wonderful meals and snacks! This shrimp salad was my favorite of the visit! We also had an evening with friends that was just as tasty and beautiful.
On the road to Glenn and Bill in Madison, Mississippi; I arrived just in time for dinner and drinks and lots of catching up. Bill always makes some culinary wonder. We had an amazing baked brie appetizer, apple salad and that evening Bill's ham sandwiches hit the spot.
These are "beautiful" hams!
I don't have a photo, but one of the things that I always look forward to is my "packed" lunch that Bill always makes for me for my trek up I-55 to St. Louis. This trip it was homemade pimento cheese AND a meatloaf sandwich that was to die for!
St. Louis was a trip of hotel and restaurants. It wasn't till I was on my way back south on I-55 to spend a little time in Covington, Louisiana at Mahognay Oaks with Mike and John, did another amazing meal "appear" as if by magic!
I've written before about Mike's amazing meal magic. Mike made this amazing salmon on a bed of spinach, with bacon wrapped asparagus, baked tomatoes and spaghetti squash!
Again...pretty, pretty, pretty AND so healthy! Everyone did seem to be dieting along the route.
We had a sugar free jello that evening, which prompted lots of "the last time I had jello" stories along the way. Lots of giggles were to be had!
It was so good to be close to "home" again and be able to hang out a bit on the Northshore before heading back in to New Orleans on Sunday morning.
And, the amazing meals didn't stop. With the car, I headed out to see Ron and Wilson for dinner on Sunday night in New Orleans East. Wilson always outdoes himself. While the chicken, shrimp and calamari were amazing, it was Wilson's beautifully presented ceasar salad and homemade guacamole that I enjoyed. That blueberry tart was wonderful too.
HUGE MERCI to my men on meals. What a lucky girl am I!
